Quinoa Veggie Bake

Today we are making a quinoa veggie bake that is PERFECT for fall!

Here’s what you need:

2 large carrots

1 large zucchini

1/2 onion

1 cup broccoli

1 sweet potato

1 cup of mushrooms

2 cups uncooked quinoa

2 cups water

2.5 cups chicken broth

1 tsp vegeta (if you don’t have vegeta just add more garlic powder and onion powder and salt and maybe chicken billon) but I always recommend vegeta with any of my recipes. You can find it on Amazon!

1 tsp garlic powder

1 tsp onion powder

salt and pepper to taste

2 tbsp butter

1 clove of crushed garlic

1/4 cup chopped parsley (most of it will be added inside before baking, but save some to put on top when it’s ready to serve)

1/4 cup chopped chives (most of it will be added inside before baking but save some to put on top when it’s ready to serve)

1/2 cup shredded cheese (I used cheddar and mozzarella blend for mine!)

1 avocado

2-3 green onions

 

Here’s how you make it:

Dice up all your veggies: carrots, zucchini, onion, broccoli, sweet potato, mushrooms

Add 2 cups of uncooked quinoa to a large glass baking dish and then add in all of your chopped up veggies

Add spices (garlic power, onion powder, vegeta, salt and pepper)

Then add 2 cups water and 2.5 cups chicken broth and mix everything together so it’s evenly coated

Bake in the oven for 50 min at 400 degrees

After 50 minutes, take it out and add garlic, butter, more seasoning if needed and parsley and chives and most importantly…CHEESE!! Mix in some of the cheese and then top with some more so you get a nice crispy layer!

Bake again for a few minutes until the cheese on top melts and is golden brown

Add avocado, top with more parsley, chives and green onion…SO DELISH!

This dish is absolutely perfect for meal prep, so easy for dishes (only one pan) and goes well with any protein! Hope you enjoy! xx
