Pumpkin Spice Chocolate Chip Pancakes

Pumpkin. Spice. Chocolate. Chip. PANCAKES! I wouldn’t say this is my *healthiest* recipe yet haha but is SO GOOD, festive and the perfect comfort food to make for breakfast or brunch on the weekend!

I’d say serves 1… but possibly 2 hahahah

Here’s what you need:

1 cup buttermilk pancake mix (i used Bobs Red Mill Buttermilk Pancake and Waffle Mix)

3 tbsp pumpkin purée

1/4 tsp cinnamon

1/4 tsp pumpkin pie spice

1/2 cup oat milk

1 egg

Handful of chocolate chips

Maple syrup to top!

Here’s how you make it:

Mix everything together in a bowl and then cook on stovetop (approximate 2 minutes on each side or until golden brown)! Add maple syrup and cinnamon, to taste!
