Orzo with zucchini, ground turkey & basil

I don’t eat out very much during the week because I really love cooking most of my meals! This recipe is one of my go-to weeknight meals because SUPER simple and delicious and comes together in about 15 minutes which is key! It’s packed with veggies, lean protein, some carbs and TONS of flavor! Hope you guys enjoy!

Here is what you will need:

1 cup of orzo

1 lb ground turkey

1 zucchini

1/2 onion

2 cloves of garlic

handful of basil

1/2 cup of pasta water

1/3 cup of parmesan cheese

1/2 cup chopped tomatoes

olive oil

*Makes approximately 2-3 servings! 

Here is how you make it:

Make orzo according to package. Then in a frying pan, add in diced onion and crushed garlic and some olive oil and cook until fragrant. Then add in the ground turkey and break up into small pieces until fully cooked. After about 10 minutes, add in zucchini and cook for another ~5 minutes. Then once your zucchini is nice and soft, add in the cooked orzo, basil, pasta water and parmesan cheese. Then feel free to top with tomatoes, more parm, olive oil, and salt and pepper to taste!
