Mini Cauliflower Crust Pizzas

So I picked up these mini cauliflower thins on my last Trader Joes run and I was CRAVING pizza tonight for dinner so I decided to go for it! And let me tell you…they came out SO GOOD! This is such an easy weekday meal because you can whip it up in seriously under 5 min!! It’s also a perfect way to get in some hearty comfort food that you can actually feel good about! And you can literally put anything on these mini pizzas, so it’s a great way to use up any leftover veggies/meats that you have in your fridge!

Here is what you will need to make 4 mini pizzas:

1 package of cauliflower thins from Trader Joes

1/2 small zucchini, sliced

1/4 red onion, sliced

4 small mushrooms, sliced

2 spoonfuls of pesto

2 spoonfuls of tomato sauce

1 handful of mozzarella cheese

 

First, put your cauliflower thins on a baking dish and bake in the oven at 400F for 10 minutes or until crispy!

 

While your “crust” is in the oven, you can slice up your red onion, zucchini and mushrooms and lightly sauté on your stovetop so that the veggies cook down a bit!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

When your “crusts” are nice and crispy, take them out of the oven and add your sauce! I wanted to mix things up a bit so I made 2 with pesto and 2 with regular tomato sauce, but you can do whatever you prefer!!

 

 

 

 

 

 

 

 

Next, add some cheese! I added just a handful of mozzarella cheese. Then add your veggies! This is such a versatile dish so you can add whatever toppings you’d like! I made mine vegetarian but you can add chicken or any other type of meat as well!

 

 

 

 

 

 

 

 

Then, bake in the oven at 400F for 5-8 minutes or until your cheese is completely melted and the veggies start to look a little crispy! You can also broil for 1-2 minutes at the end if you want your pizzas to be EXTRA crispy! ENJOY!!!
