Fajita Eggs

This is one of my favorite breakfasts! These eggs are insanely packed with flavor.

What You’ll Need:

Serves 2

1/2 Avocado

4 eggs

1/4 cup mushrooms

1/3 zuchini

1/4 red or green pepper

1/4 red onion, diced

2 tablespoons cheddar cheese

1 teaspoon olive oil

What to do:

Finely chop up all veggies. Saute all the veggies in just a little bit of olive oil. Whip the eggs up in a separate bowl, and once veggies are cooked, throw the egg mix into the veggies. Put the pan on low heat, and slowly stir in the cheese. Once eggs are ready, top with some avocado and optional Sriracha.
