Dairy Free CREAMY Quinoa Risotto

You guys…. This may be one of my new fav meals I’ve come up with. The flavors work SO well together, and you’d actually never know it doesn’t have any cream or cheese in it. It’s such a perfect fall recipe, as it’s warm and hearty. And it’s pretty basic, with only 6 ingredients!

INGREDIENTS

1/2 Onion

1 Cup Quinoa

1/2 Teaspoon Minced Garlic

2 Cups Spinach

1 Cooked Sweet Potato

1 Cup Ground Turkey Meat

Olive oil, salt, pepper

STEPS

First things first:

The sweet potato has to be cooked, so I just like to pop it in the microwave and press “potato” on the buttons. (usually press it twice, but check how powerful your microwave is if it’s cooked thoroughly!) Plus, don’t forget to aerate the potato. Meaning you have to poke the raw potato with a fork a few times before placing it in the microwave so it cooks through. Super easy, but this does take some extra prep time.

Next, cook the quinoa according to the packaging. I like to add a little bit more water than the box says because it becomes more fluffy this way. Plus, when we add in the onions, it’ll need a bit extra water. (About 1/4- 1/3 cup extra)

Dice up the onions finely, and place them in the cooking quinoa.

While it’s boiling, pull out a large sized saucepan, drizzle on some olive oil and throw on your ground turkey. Add in a bit of salt and pepper.

Wait until your turkey is almost cooked through, and then add in the spinach. Let this saute for a couple min.

As it’s sauteeing, pull out a blender, peel the sweet potato’s skin off, and place it in the blender. Add in 1/3 cup olive oil, garlic, salt and pepper.

By now, the quinoa should just about be done, and your turkey and spinach, too.

Place the quinoa in the saucepan with the turkey and spinach. Stir around.

Take your sweet potato puree, and now mix that in as well. Add a little more olive oil, salt and pepper if necessary and heat for a few more min.

BAM!!! It’s ready to go. If you WANT you can top it with some parmesan cheese (obvi then it’s not dairy free), but if you don’t care about that- then parm literally makes this a 5 star restaurant dinner lol.
