Chicken Salad

Chicken salad is one of my favorite meal prepped lunches and it’s SO EASY to make!

First, boil 2 chicken breasts for 20-25 minutes and then let them cool completely before shredding. You could also use grilled chicken or rotisserie chicken if you have either of those on hand, as well!

While your chicken is boiling, finely chop up 2 stalks of celery and and 2-3 green onions. Once your chicken has cooled, mix everything together in a bowl with 1/2 cup of Greek yogurt and one scoop (approximately 1/4 cup) of mayo! Then add salt, pepper, juice from half a lemon and 1 tbsp dijon mustard (or more if you like a little extra kick)!

I usually eat mine with avocado and crackers but you can spread it on bread if you want to! So delicious and can keep in the fridge for a few days as well so it’s great for meal prep. Hope you enjoy!! xx
