Chicken salad is one of my favorite meal prepped lunches and it’s SO EASY to make!
First you can boil your chicken for 20-25 minutes and then let it cool completely. While your chicken is boiling, you can finely chop up celery and onion! Then mix everything together with one scoop of Greek yogurt and one scoop of mayo! Then add salt, pepper, lemon juice and dijon mustard to taste!
I usually eat mine with avocado and crackers but you can spread it on bread if you want to!
