This dish is PACKED with veggies and flavor. I love doing different spins on bowls, but this is by far one of my favs. Feel free to substitute any other veggie in this, or add lean meat! But, there is still a great amount of protein in this! Also, I realize there are a lot of ingredients in this, but I promise it’s super easy to make.
THE RECIPE!
Serves 2-3 (serves 2 but big big bowls lol so could serve 4 smaller sized bowls)
What You’ll Need:
1 Zucchini, diced
1 cup quinoa
1/2 red onion, diced
1 cup asparagus, diced
1 cup mushrooms, diced
1 Avocado
1/2 cup black beans
1 tomato, diced
Handful of green onions
2 cups chopped romaine lettuce
1/2 cup cheese
Lime/Lemon
Optional salsa or hot sauce
Directions:
First start by cooking the quinoa as directed on the package. I actually love cooking my quinoa with a little onions and carrots, just to add some great flavor. Dice the zucchini, mushrooms, and asparagus. Saute them in either a little olive oil or avocado oil. I love using a TOUCH of chili flakes and garlic salt to saute my veggies.
Start to dice the green onions, red onions, lettuce, and prepare the toppings.
Once the quinoa is ready, throw it on a bowl of lettuce. Then add the sautéed veggies, followed by black beans. (I just rinsed them from the can)
Time to top your bowl! Add a little olive oil or avocado oil, with salt, pepper, and a squeeze of lemon or lime.
Top with red onions, cheese, avocado (or guac!), green onions, salsa, tomatoes, hot sauce- all toppings are optional but this is where all the flaaaavor comes in!!
