I had some friends over for a little fall dinner and I tried out a new recipe and it was actually a huge hit! It’s super easy to make because you only need one baking dish and it’s super hearty and comforting, perfect for the colder months of the year!
Here’s what you need:
2 potatoes
1 packet of chicken tenders
1/2 onion
1 zucchini
1/2 cup greek yogurt
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1/2 tsp paprika
Handful of chopped chives
Handful of chopped parsley
1/3 cup parmesan cheese (plus more to top)
1/3 cup mozzarella cheese
Note: you can really add in any vegetables that you have at home, carrots or broccoli would work great too!!
Here’s how you make it:
Peel potatoes and first cut lengthwise then slice into small half moons. Place in the bottom of a glass baking dish and add in diced onion.
Next, cut up your chicken into small cubes and place in baking dish
Cut zucchini into half moons as well and add to dish
Top everything with greek yogurt, olive oil, all your seasonings and then mix together (make sure that you have enough seasoning and that everything is well mixed so that the veggies and chicken are well coated)
Then add in your fresh herbs and cheese and mix it all together again!
Top with a sprinkle of parmesan cheese so you get a nice crispy layer on the top of your dish
Place in a 400 degree oven and cook for approximate 30 minutes or until your chicken is fully cooked through
