Cut up chicken into bite sized pieces and place on a baking sheet. Cut up red onion and summer squash into smaller pieces as well and add to the baking sheet with the chicken bites.
Then add seasoning and mix until all pieces are evenly coated.
Bake the chicken and veggies at 415 degrees for 15-20 minutes or until chicken is fully cooked.
While the chicken and veggies are in the oven, it’s time to make our hummus! Add all hummus ingredients to a blender and mix until creamy and evenly combined. Then put the hummus in a serving bowl and top with a little drizzle of olive oil and some rosemary!
Once the chicken and veggies are done cooking, take a toothpick or mini skewer and add one piece of squash, the one or two pieces of red onion and then finish with a piece of chicken. This way, you will get the flavor from each ingredient in every bite! Dip the skewers in the artichoke hummus and I’m telling you, you guys are going to keep coming back to the recipe again and again because it is truly THAT GOOD!
