Chicken salad is one of my favorite meal prepped lunches and it’s SO EASY to make!
Here’s what you need:
2 chicken breasts (approx. 1 lb works too)
1/2 cup celery diced
1/3 cup green onion
1/4 cup onion, diced
1/2 cup of mayo
Juice from 1/2 lemon
Salt and pepper to taste
Couple shakes of garlic powder for extra flavor
Sourdough toast
Drizzle of olive oil
1/2 avocado, sliced
Here’s how you make it:
First, boil 2 chicken breasts for 12 minutes and then let them cool completely before shredding. I just used my hands to shred it. You could also use grilled chicken or rotisserie chicken if you have either of those on hand, as well!
While your chicken is boiling, finely chop up celery, onion and green onion. Once your chicken has cooled, mix everything together in a bowl and then add mayo, salt, pepper, juice from half a lemon and garlic powder.
I toasted up some sourdough bread and added a drizzle of olive oil. I added chicken salad and topped with sliced avocado! So delicious and can keep in the fridge for a few days as well so it’s great for meal prep. Hope you enjoy!! xx
