If you guys have been following me for a while now, you know how much I love a good veggie sheet pan veggie situation! Love roasting all of my favorite vegetables with some olive oil and seasoning and getting them nice and crispy and flavorful in the oven! AND I also love cauliflower gnocchi so I decided to mix these two ideas together and do a one pan caprese cauliflower gnocchi bake and oh my goodness it came out SO GOOD!!!!
Here is what you will need:
1 bag of cauliflower gnocchi (I got mine from Trader Joe’s, or 2 if you’re serving more than 3 people)
1 cup of cherry tomatoes
2 cups of spinach
½ cup of mozzarella balls
1 teaspoon minced/finely chopped garlic (honestly I do more though because I LOVE garlic)
Handful of basil leaves
Olive Oil
Salt, pepper to taste
First place your frozen cauliflower gnocchi on a pan with your cherry tomatoes. Drizzle evenly with olive oil and garlic.
Then put in the oven for about 20-25 minutes at 400 degrees and shake/stir halfway through.
Then remove from oven and add spinach, basil, mozzarella balls, olive oil, salt and pepper!
Put back in oven for about 5 minutes or until your spinach has cooked down and the cheese is nice and melted. Take out and stir everything together.
WOW this is so good and so easy to make! (And cleanup is super easy too with everything coming together in just one pan!)
